2 tomatoes, diced
1 cucumber, diced
1 red onion, thinly sliced
1 bell pepper (any color), diced
1 carrot, peeled and grated
1 lemon, juiced
2 tablespoons olive oil

Fresh parsley or mint leaves, chopped (optional, for garnish)
Combine the tomatoes, cucumber, bell pepper, red onion, and carrot in a mixing bowl.
In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make a dressing. Adjust the seasoning according to your taste.
Pour the dressing over the vegetables in the mixing bowl. Gently toss the salad to ensure all the vegetables are coated with the dressing.
