Ashkenazi charoset is a variety of charoset that uses apples and walnuts as the base, with honey for sweetness.
1½ cups (360 g) peeled, cored, and chopped apples (e.g. MacIntosh)
¾ cup (180 g) finely-chopped walnuts
2 tbsp sweet red wine
1 tsp cinnamon
2 tbsp honey
Mix all ingredients together, and refrigerate overnight for best flavor.
Adjust seasoning, if necessary, after it's chilled.
Serve with matzoh, or just eat with a spoon.
