Confederate cush is a dish that became popular among the armies of the South during the American Civil War, since it used ingredients that many Southerners had on hand.
Fat bacon, chopped
Cubed cooked beef
Cornmeal mush
1 qt water
1 clove garlic (optional)
Put bacon into a hot iron skillet, and fry the grease out of it.
Add the beef, then slowly add 4 cups of water. Bring to a boil.
Add cornmeal mush and stir until dry.
Remove skillet from fire, and let cool.
Serve warm, like hash.
