5 hot house cucumbers
4 cups scallions
6 cups buttermilk
1 cup cream
2 tbsp tarragon
2 tbsp lemon juice
1 tbsp sugar
Salt to taste
Pepper to taste
Peel cucumbers.
Dice into ¼-inch dice.
Finely chop scallions.
Mix everything together.
