a little butter
4 eggs, separated
Salt to taste
Pepper to taste
1 tablespoon milk
4 oz finely-grated cheese
Grease a shallow baking dish with butter. Add the egg yolks.
Mix in the salt, pepper, milk, and a little of the grated cheese.
Whip the egg whites to a stiff froth, and lightly fold in the remaining cheese.
Pile the egg white mixture on top of the egg yolks.
Bake the whole dish in a moderate oven.
