Ensalada Rusa, which translates into "Russian Salad" is a simple potato salad that is a staple in Uruguayan tables. It is served with "asado" in restaurants.

2 large potatoes, diced
1 cup fresh peas
2 carrots, diced
½–¾ cup mayonnaise
Salt to taste
Pepper to taste
Cook all vegetables separately until tender, but not too soft.
Allow to cool completely.
Dress with mayonnaise, salt, and pepper.
Serve as a side dish.
