Ginger Biscuits

3½ cups (475 g/1.05 lb) all-purpose flour

2 sticks (250 g/8.8 oz) unsalted butter

1 cup (225 g/7.9 oz) caster sugar

2 tablespoons ground ginger

2 eggs

Preheat the oven to 160 °C (320 °F). Grease a baking sheet.

Rub the butter and ginger into the flour in a bowl until the mixture resembles breadcrumbs.

Add the eggs and mix to a soft dough, adding a little milk if necessary.

Roll out the dough to 5 mm (0.20 in) and cut out biscuits with a plain round cutter.

Place them on the prepared baking sheet and bake for 5 minutes until golden.
