Ifumbe is a Rwandan snack made from cassava flour and other simple ingredients. These cassava fritters are crispy on the outside and soft on the inside, making them a perfect treat for any time of the day.
2 cups cassava flour
1 teaspoon baking powder
¼ teaspoon salt
¼ cup sugar
½ teaspoon ground cinnamon (optional)
1 cup milk
¼ cup water
1 egg, beaten
Vegetable oil, for frying
In a mixing bowl, combine the cassava flour, baking powder, salt, sugar, and ground cinnamon (if using). Mix well to evenly distribute the dry ingredients.
Add the milk, water, and beaten egg to the dry ingredients. Stir until a smooth batter forms. The batter should have a slightly thick consistency.
In a frying pan, heat enough vegetable oil over medium heat for frying.
Once the oil is hot, drop spoonfuls of the batter into the hot oil, making small fritters. Be careful not to overcrowd the pan; fry in batches if needed.
Fry the fritters for about 2–3 minutes on each side, or until they turn golden brown and crispy.

Use a slotted spoon to remove the fried fritters from the oil and place them on a plate lined with paper towels to drain excess oil.
Serve the ifumbe warm as a tasty snack or dessert.
