1 cucumber, chopped in 1 cm cubes
1 tomato, chopped in 1 cm cubes
1 onion, chopped in 1 cm cubes
¼ cup chopped parsley
2 tbsp oil
2 tbsp lemon juice or vinegar
½ tsp salt
½ tsp freshly-ground black pepper
1 tsp za'atar (can substitute ¼ tsp thyme)
Mix cucumber, tomato, onion, and parsley.
Mix oil, lemon juice, salt, pepper, and za'atar to make dressing.
Pour dressing over vegetables. Correct seasoning to taste.
