Kala is a great and mouth watering snack, similar to Nigerian puff-puff.
1 tablespoon salt or to taste
1 cup sugar
3â4 cups warm water
4½ teaspoon active dry yeast
6â7 cups all purpose flour
Vegetable oil for deep frying
Combine the salt, sugar, warm water, and yeast in a medium-size bowl. Set aside for about 5â7 minutes.

Add the flour and mix very well; if you have a mixer, use it.
Let the mixture rise for approximately 2 hours.

Pour the vegetable oil in a large saucepan until it reaches at least 5 cm deepâtoo little oil will result in flatter fritter. Heat over medium heatâa drop of batter should rise to the surface and start sizzling.
Use a spoon or your hands to drop dollops of batter into the hot oil. Fry for a few minutes until golden brown on one side. Turn the ball to the other side and fry until golden brown.
Use a large perforated spoon to remove the fritters and place them on paper towels to soak up excess oil.
If desired, roll the finished product in powdered sugar or table sugar.
