Lafun, also known as white amala, is a typical Nigerian swallow made from cassava flour. It is commonly consumed by the Yoruba tribe, and it is served with various soups, such as ewedu soup, okro soup, ẹfọ riro and ẹgusi soup.
2 cups water
1 cup cassava flour
¼ cup hot water
Boil the 2 cups of water in a pot, then stir in cassava flour.
Stir in the ¼ cup hot water, and allow the mixture to steam for a few minutes.
Stir until the mixture is smooth and lump free.
Serve the lafun with your choice of soup.
