2 tablespoons vegetable oil
1 onion, finely chopped
2 cloves of garlic, minced
1 tomato, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 teaspoon ground paprika
½ teaspoon ground cayenne pepper (optional, for heat)
1 bunch of fresh collard greens, washed and chopped
Salt, to taste
2 cups vegetable broth (or water)
In a large pot, heat the vegetable oil over medium heat.
Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes translucent and the garlic becomes fragrant.
Stir in the diced tomato, red bell pepper, and green bell pepper. Cook for a few minutes until the vegetables are softened.
Add the chopped collard greens to the pot and mix well with the sautéed vegetables.
Season the stew with ground paprika, ground cayenne pepper (if using), and salt to taste. Stir to coat the collard greens and vegetables with the spices.
Pour in the vegetable broth (or water) to the pot, ensuring that the collard greens are well covered.
