Mazagran (Algerian Iced Coffee)
Mazagran (مزغران), also called Café Mazagran, is an iced coffee from Algeria. Often deemed the original iced coffee, mazagran originated from a city in Algeria with the same name. It is said that the drink was created by French colonial troops while in captivity in Mazagran Fortress. After they were freed, the French soldiers introduced the drink to Parisian cafés, where the beverage became trendy for some time. However, these days, the consumption of Mazagran in both Algeria and France is considerably rare.

Ice cubes
1 cup brewed black coffee
Freshly-squeezed lemon juice
Sugar or other sweetener
1 lemon slice or wedge (optional)
Fill a tall, narrow glass with the ice cubes.
Pour the coffee over the ice.
Add the lemon juice and sugar to taste.
Add the lemon slice or wedge as a final touch if desired.
- •In some recipes, a sugar syrup is poured into the glass first, then a mixture of water and lemon juice is gently and carefully added afterwards so that the two ingredients don't mix. Ice cubes and black coffee are added later with a sprinkle of lemon zest.
- •Some European variations suggest adding rum.
