2 slices whole-wheat bread, toasted and cubed
2 beaten eggs
1 large onion, chopped
½ cup milk
½ cup grated Parmesan cheese
3 tablespoon fresh parsley, finely chopped
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
½ teaspoon salt
¼ teaspoon pepper
1½ pounds ground beef
Cooking spray
½ cup (or more) ketchup
Preheat oven to 325°F.
Combine beaten eggs, milk, mustard, onion, Parmesan cheese, parsley, pepper, and salt, then bread cubes.
Crumble beef into mixture.
Fold meat and sauce mixture together.
Heavily spray a 9 x 13-inch glass baking dish or Dutch oven with cooking spray.
Form meat into a loaf shape in pan no more than 3 inches high.
Cover with ketchup, even if it takes more than ½ cup.
Bake 75 minutes or more, if desired.
