Minestra alla Capucina is an Italian recipe of soup in which Cappuccina lettuce is used.
Anchovy, scaled
Butter
1 small onion, cut across
4 oz boiled rice
Stock
Pound anchovy.
Fry it in butter with the onion and rice until the rice is golden brown.
Remove the onion and season with salt.
Gradually add some stock, cooking until the dish is of the consistency of rice pudding.
