Step-by-step guide to making this recipe
1

Place a heavy-bottomed pan on the heat. Add milk, and warm it on medium heat.

2

Keep aside ⅓ of the sugar and add the rest of sugar to the milk.

3

Reduce the heat and continue to heat the milk until it reduces by half. Remove from the heat and and keep aside.

4

Add the remaining sugar to another pan over medium heat. Allow the sugar to get warm and then melt. You will gradually notice the sugar browning and caramelizing.

5

When it gets to the point of a golden bubbly mixture, add a tablespoon of water in the caramelized sugar and then pour this mixture into the heavy-bottomed pan with milk. Stir well until combined.

6

Once milk cools off, add the whisked yoghurt, stir well and pour the mixture into earthen pots.

7

Let the doi set in a warm place for few hours. Once set, refrigerate and serve chilled.
