Nigerian cauliflower fufu is swallow made with cauliflower, which is rich in fibre. Cauliflower fufu is similar to pounded yam, just like eggplant fufu is similar to amala.

6 florets cauliflower

3 tablespoons palm oil (optional)

½ teaspoon psyllium husk

Cut cauliflower into small pieces, and blend with a blender to give a purée.

Strain the cauliflower mixture through a cloth, retaining the solids.

Squeeze the sieve cloth to drain more water until relatively dry and a dough is formed.

Transfer the dough to a saucepan over medium heat, and stir in the psyllium husk.

Stir and mold to form a paste, and shape into portions.

  • Psyllium husk makes the cauliflower fufu moldable.
