Nigerian peppered turkey wings is a side dish that can be eaten with rice in Nigeria. It is also eaten at parties.
6 turkey wings
2 small onions, peeled
4 cloves garlic (optional)
½ teaspoon ginger
2 teaspoon stock cube, crushed
1 teaspoon dried thyme
2 medium red bell peppers
½ cup vegetable oil
1 teaspoon salt or to taste
Wash the turkey wings and put in a pot with 1 onion, garlic, ginger, stock cube, and thyme. Cover with water and bring the mixture to a simmer.
Cook until the water dries up, then bake in the oven at 200°C.
Blend the bell pepper and remaining onion to get a smooth paste.
Heat a small amount of vegetable oil in a pot. Add the pepper paste, and simmer until thickened and losing its raw flavor. Season with salt.
Add the turkey wings to the sauce, and toss to coat.
