Rice and beans jollof is a typical Nigerian food made from rice and beans. It is served with beef, chicken or moin moin.

1 cup dried beans
2 fresh chiles
5 medium tomatoes
1 medium onion, chopped
2 tablespoons vegetable oil or palm oil
1 stock cube
1 teaspoon salt or to taste
2 cups parboiled rice
Rinse the beans, and boil in water until tender. Drain the cooked beans.
Grind together the chiles, tomatoes, and onions to make a purée.
Heat a thin layer of oil in a pan, and add the purée. Season with stock cube and salt, and simmer for 3 minutes.
3 minutes
Stir in the parboiled rice and beans, and cook for 5 minutes.
5 minutes
Serve with beef, chicken, or moin-moin.
