Nkhwani wa ndiwo is a delightful Malawian snack made from a variety of vegetables. These vegetable fritters are crispy, flavorful, and perfect for a quick and tasty treat.
2 cups grated mixed vegetables (e.g. carrots, cabbage, onions, and green beans)
1 cup all-purpose flour
1 egg, lightly beaten
1 teaspoon baking powder
1 green chile (optional, for heat), finely chopped
2 tablespoons cornmeal
Salt, to taste
Vegetable oil, for frying
In a mixing bowl, combine the grated mixed vegetables, all-purpose flour, beaten egg, baking powder, and finely chopped green chili (if using).
Add the cornmeal to the mixture and mix well until everything is evenly combined.
Season the mixture with salt to taste. Adjust the seasoning according to your preference.
In a frying pan, heat vegetable oil over medium-high heat.
Take spoonfuls of the vegetable mixture and carefully drop them into the hot oil. Flatten the fritters slightly with the back of the spoon.
Fry the fritters until they are golden brown and crispy on both sides. Use a slotted spoon to remove them from the oil and place them on paper towels to drain any excess oil.
Repeat the frying process with the remaining vegetable mixture.
Allow the fritters to cool slightly before serving.
