Pepper soup is a popular Nigerian soup. It is usually very spicy and is served as an appetizer in both official and informal gatherings.

1 kg goat, catfish, chicken, or assorted meats
1 tsp salt (adjust to taste)
2–3 seasoning cubes
1 tbsp fresh grated ginger or garlic (optional)
4–6 cups water
2 tbsp pepper soup spice mix
1 tbsp ground crayfish
1 tsp ground pepper (adjust to taste)
1 cup scent leaves or uziza leaves
Wash and cut the meat into bite-sized pieces.
Rub the meat well with the salt, seasoning cube, and ginger/garlic.
Combine the meat and water in a pot, and simmer until tender.
Stir in the pepper soup spice mix, ground crayfish, and ground pepper. Simmer for 10 minutes to let the flavors blend.
10 minutes
Stir in the scent leaves, and cook for 2–3 minutes.
2–3 minutes
Taste, adjust seasoning, and serve hot.
