¼ cup tomato sauce
Salt, pepper, and other seasonings to taste (see tips below)
Cooking spray
2 eggs
2 tablespoons chopped green bell peppers
2 tablespoons chopped mushrooms
¼ cup shredded mozzarella cheese
Mix spices and tomato sauce and allow to meld flavors while preparing the rest of the recipe.
Beat eggs well.
Heat a small skillet over low heat, sprayed with cooking spray.
Pour beaten eggs into skillet, then cover skillet.
Cook for 3 minutes. Eggs should be almost set.

Carefully flip omelet over. Cook another minute.
Combine mushrooms and peppers and cook 30 seconds in microwave oven.
30 seconds
Spread tomato-spice mix over omelet. Sprinkle cheese over tomato sauce. Top cheese with hot mushrooms and peppers.
Cover skillet. Cook another 2 minutes. Cheese should be melted.
