White potatoes
Put the potatoes in a pot, and cover them with cold water.
Put the pot on the stove, and bring to a boil.
Cook the potatoes until they begin to crack.
Drain the potatoes, and place them in a pan by a fire or in the oven until they are quite dry and fall to pieces.
Rub the potatoes through a wire sieve onto a serving dish.
Serve immediately.
