Potatoes
Flour (optional)
Egg yolk (optional), beaten
Fine breadcrumbs (optional)
Beef drippings
Boil the potatoes until almost done. Drain.
If desired, dip the potatoes in flour, then egg yolks, then breadcrumbs.
Heat the drippings in a pan. Add the potatoes, and fry until brown and crisp, shaking regularly to prevent burning.
Remove from pan, and serve hot.
