Queen's Soup, or Zuppa Regina di Riso, is a rice soup. One recipe is as follows.
1 tablespoon ground rice
½ pint (285 ml) milk
1 oz (30 g) butter
Fowl (poultry) stock
Put the ground rice into a saucepan. Gradually add the milk.
Cook gently for 12 minutes in a bain-marie, stirring the whole time, until very smooth.
12 minutes
Add the butter, and pass through a sieve.
Mix the fowl stock, and serve immediately.
