2 red bell peppers, roasted, peeled, and finely chopped
1 green bell pepper, finely chopped
1 hot chile pepper (such as jalapeno , finely chopped
1 tomato, finely chopped
1 small onion, finely chopped
1 clove of garlic, minced
1 tablespoon lemon juice
2 tablespoons olive oil
1 teaspoon ground cumin
½ teaspoon ground cayenne pepper (adjust according to spice preference)
Salt, to taste
Pepper, to taste
Fresh chopped parsley or cilantro for garnish
In a mixing bowl, combine the roasted and chopped red bell peppers, green bell pepper, hot chili pepper, tomato, onion, and garlic.
In a small bowl, whisk together the lemon juice, olive oil, cumin, cayenne pepper, salt, and pepper.
Pour the dressing over the vegetables and toss well to coat all the ingredients.
