Soy milk is a plant-based beverage prepared from white soybeans, and it can be used as dairy-free milk option. Soy milk can be used to make pancakes, cereal, smoothies, and any other dish that asks for milk.

Place the soybeans in a pot or bowl, and cover with water. Leave to soak overnight.
Drain the soaking water, and replace it with fresh water. Rub the beans between your palms to remove the skin, which should come off easily. Rinse with clean water to remove any remnants of skin.
Blend the beans with a little water in a blender for about 2 minutes, or until you get a smooth paste.

Place a clean cloth or cheesecloth over a pot, and strain the blended mixture into the pot. Squeeze to extract as much milk as possible.
Cook the soy milk for about 25 minutes over medium heat, stirring to keep it from boiling over.

Reduce the heat to low, and stir in the sugar until it dissolves. Cook for about 2–5 minutes, then remove from the heat.

Cool the soy milk, and remove any thin coating that may rise to the surface.
