This recipe for spiced oysters has been adapted and modernized from the 1881 Household Cyclopedia.
100 oysters
12 whole cloves
24 whole allspice
Mace, to taste
Cayenne pepper, to taste
Salt to taste
1 cup cider vinegar
Strain the oyster liquor through a sieve, and put it in a saucepan.
Add the oysters, spices, salt, and cider vinegar.
Place them over a slow fire, and as soon as they boil remove them from the heat.
Pour the oysters into a large bowl, and let cool.
When cooled, cover and store the oysters.
