This spicy garlic oil is nice for frying chicken, fish, and fries.
½ gallon flavorless high smoke point oil, such as canola, peanut, safflower, grapeseed, or soybean
40 cloves garlic
8 Thai bird chiles, stemmed and halved
½ tsp salt
Combine all ingredients in a large stockpot.
Heat over low heat for 1 hour.
1 hour
Strain, cool, and store in the refrigerator until oil smells off, looks smoky, or tastes rancid.
