These are delicious and healthy spinach fritters.

1 cup Greek yogurt
1 cup wheat flour
3 handfuls of spinach and rocket leaves
3 eggs
1 teaspoon baking powder
1 teaspoon minced garlic
1 tablespoon olive oil
Salt to taste
Ground black pepper to taste
Combine the yogurt, flour, minced garlic, olive oil, salt and pepper in the mixing bowl.
Chop the spinach and rocket leaves, and add them to the mixing bowl.
Mix in the baking powder.
Preheat a frying pan, and grease with olive oil.
Dollop spoonfuls of batter on the pan to make a few fritters about 3 cm apart from each other.
Cook fritters until the bottoms of the fritters are golden brown. Flip the fritters with a spatula, and cook until the second side is golden brown. Remove from the pan.
Repeat the cooking steps until all the batter is used up.
