This tahini goddess dressing is similar to several commercial brands. It is excellent on salad and rice or as a marinade.

1⅓ cup canola oil
⅔ cup water
6 tbsp tahini
6 tbsp cider vinegar
4 tbsp lemon juice
5 tbsp soy sauce
6 cloves garlic
⅛ tsp xanthan gum
2 tbsp sesame seeds, toasted
2 tbsp parsley
2 tbsp chives
In a blender, combine the oil, water, tahini, vinegar, lemon juice, soy sauce, garlic, and xanthan gum. Blend on high for about 2 minutes. You will see a change in the texture of the mixture as the xanthan gum starts to work, producing a very smooth, creamy appearance.

Add the sesame seeds, parsley, and chives. Blend on low, just until mixed.
