½ cup fresh red bell peppers, diced
½ cup raisins
1½ cups cubed tofu
2 cups water
2 cups instant couscous
1 tsp olive oil
Sauté tofu, red peppers, and raisins together until soft.
Bring the water to a boil, stir in the couscous, cover, remove from the heat, and let rest for 5 minutes until the water is absorbed. Fluff the couscous with a fork.

Combine the tofu mixture with couscous and olive oil. Flavor to taste with curry or other mixed spices.
